BEEF IN RED WINE - PEPOSO
Peposo is a classic Tuscan dish from the Florence area.
Peposo is juicy beef immersed in aromatic red wine with a distinct note of black pepper, garlic and rosemary.
INGREDIENTS
• 1 KG OF BEEF, BEST WITH EXTENSIONS OF FAT, E.G. THIGH, SHOULDER
• A BOTTLE OF DRY RED WINE – WE RECOMMEND OUR TAUTILA TINTO RED
• 1 Tbsp FRESH CRASHED BLACK PEPPER
• 2 SPRANGES OF FRESH ROSEMARY
• 6 CLOVES OF PEELED GARLIC OR A WHOLE HEAD, CUT IN HALF
• 1 BAY LEAF
• SEA SALT
PREPARATION
• Cut the beef into small pieces and place in a roasting pan, garnish with rosemary sprigs, bay leaves and garlic cloves. Sprinkle with pepper and salt.
• Pour a bottle of wine over everything. Place the roasting pan with the prepared dish in the oven and bake, depending on the time you have available - 3 hours at 175 degrees C or 5 hours at 140 degrees C.
• Peposo can be served with cous cous.
