The dealcoholisation process involves a pressure system at low temperatures (30°C) that converts ethanol into vapour, which is then removed while maintaining the wine’s liquid state. The wine is subsequently filtered and bottled to retain its fresh, phenolic-rich profile.
Tasting Notes
Appearance: A straw-coloured wine with exceptional brightness.
Aroma: Mineral notes dominate, complemented by green apple and a hint of fennel, characteristic of the Verdejo variety.
Taste: Smooth, round, and fresh on the palate. Its glyceric nature is complemented by fruity flavours and a touch of acidity.
