ÉLIVO Zero Zero White: Premium Non-Alcoholic White Wine
Variety
Non-alcoholic wine crafted from Albariño (60%) and Airén (40%) grape varieties.
Production
The ripening process in the vineyard determines the optimal harvest day. Grapes are handpicked, manually selected at the winery, and destemmed. After crushing, the must is cooled for natural decantation before being transferred to fermentation vats. Fermentation occurs at low temperatures, ensuring fresh and persistent aromas, which are preserved during dealcoholisation.
Dealcoholisation is performed using a pressure system at 30°C to vaporize ethanol, which is then extracted while retaining the wine’s integrity. A portion of the wine is aged for 6 months—partly in French oak barrels and partly with lees in stainless steel vats. This enhances smoothness and highlights the Albariño varietal aromas. The final blend is clarified, filtered, and bottled.
Tasting Notes
Appearance: A bright, clean, and luminous pale yellow wine with green hues.
Aroma: Elegantly balanced floral and fruity notes, featuring mango and melon, complemented by smoky and grassy undertones. Light aeration reveals ripened fruit and vegetal aromas.
Taste: Structured and balanced with smooth acidity and hints of orange peel. A silky texture and a lasting finish evoke memories of ripened fruit.
