Dealcoholization Process
A 100% physical process with no chemical interactions. The wine undergoes cold vacuum distillation at 28–30°C (under 33 bars of negative pressure) to remove alcohol while preserving its aromatic profile. Carbon dioxide (5 bars) is then added to create effervescence, followed by flavor balancing with rectified concentrated grape must.
Quality Assurance
Produced in compliance with the stringent quality standards of Cave de Ribeauvillé, including sustainable agriculture (certified HVE Level 3) and manual harvests from hillside vineyards on the renowned Ribeauvillé geological fault.
