Vinification
This cuvée is crafted with utmost respect for the Cave de Ribeauvillé quality charter. Grapes are hand-harvested exclusively from hillside vineyards located on the renowned Ribeauvillé geological fault, adhering to sustainable agriculture practices (certified HVE Level 3).
Whole-cluster pressing is performed using pneumatic presses to prevent excessive handling. The juice is separated to optimize wine quality. After static settling, fermentation occurs under controlled temperatures, followed by aging on fine lees for 3 to 6 months to develop depth and complexity.
